Health-Conscious Eaters are Going for Game (excerpt)
... Executive Chef Justin Perez says he has loved the bold flavor of game ever since he took his first bite of an antelope chop: ``It was one of the best things I ever tried in my life.''
For the home cook, grilling and roasting are the best methods, and cooking the meat rare to medium rare is key. ``The more you cook it, the tougher it gets and the gamier it gets,'' Perez says. ``Just because it's pink doesn't mean it's poisonous.''
One of his tricks is soaking the meat in milk for 24 hours or more to help tenderize it and mellow the taste. ``It lets the true flavor of the meat come through.''
Once people get past the ``fear factor'' of eating and cooking game, it opens up a whole new world of cuisine, Perez says.
